  • Roast the Sweet Potato:

    • Place the chopped sweet potatoes on a parchment-lined baking tray.

    • Drizzle with 1 tablespoon of vegetable oil, then season with salt, pepper, and taco seasoning.

    • Roast in the oven for about 30 minutes until golden and tender.

  • Prepare the Pico de Gallo:

    • In a bowl, combine ½ of the chopped red onion, all the diced tomato, ½ of the chopped coriander, a pinch of salt and pepper, and fresh lemon juice. Mix well and set aside.

  • Make the Guacamole:

    • In another bowl, mash the avocado until smooth.

  • Cook the Ground Beef:

Storage Tips
