Instructions

  • Cook the Chicken: Marinate chicken breast with 1 tbsp olive oil, salt, pepper, and paprika. Heat a grill pan over medium heat, cook the chicken for 5 minutes per side, then add ½ cup water and cook for another 5 minutes on low heat until tender. Let it cool slightly, then slice.

  • Roast the Sweet Potato: Toss diced sweet potato with ½ tbsp olive oil, salt, and pepper. Cook in the air fryer at 180°C for 20 minutes, shaking halfway through.

  • Prepare the Tomato & Pepper Salad: Mix halved cherry tomatoes with diced bell pepper, sesame seeds, lemon juice, ½ tsp olive oil, salt, and pepper. Optionally, roast in the air fryer at 160°C for 5 minutes.

  • Make the Tzatziki: Combine Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, dill, salt, and pepper. Mix until creamy.

  • Assemble the Bowl: Spread 5 tbsp hummus in the center of a serving plate. Add the grilled chicken slices, roasted sweet potato, tomato-pepper salad, 3 tbsp tzatziki, avocado slices, and mixed greens around it. Garnish with fresh mint leaves.

Storage Tips

  • Refrigerator: Store chicken and sweet potatoes in an airtight container for up to 3 days.

    Tomato-pepper salad: up to 1–2 days (best fresh).

    Hummus and tzatziki: store separately in airtight containers for 3–4 days.

    Avocado and mixed greens should be added fresh before serving.

  • Freezer: Not recommended due to dips, avocado, and fresh veggies.
